Preserved Limes

The amount of Limes used will varies depending on your preference. Making Num Ngow is a simple process, however it does take quiet sometime to achieve the finish product. This recipe is to give you an idea of what types of ingredients are involve and the procedure for making Num Ngow. I used a 3 quarts container to store my Num Ngow, therefore, this measurement is base upon such.
Ingredients
20 Limes, clean
1/2 cup of Sugar
1 cup of Salt
3 qts of Water
Method
1. Several weeks in advance, you want to wash the limes and let them dry (sit) in the sun for a week or so. Remember to flip them often so that all the sides are thoroughly dried. It should be ready when the outer skin feels a bit harden to the touch.
2. Prior to arranging the limes in a container, use a damp towel to gently clean the skin as dust might of collect on it slightly. Use either plastic or a glass jar.
3. In a pot, on medium to low heat add the sugar. Stir constantly so that it doesn't burn.
4. Once the sugar start to caramelize and become a rich brown color, add the water and salt.
