Lotus Root Salad

My BFF was talking about lotus root salad awhile back or maybe it was Banana Blossom Salad? To my surprised, I really enjoy the taste of this Lotus Root Salad. Although I went a little over with the sugar but that is adjustable – next time.

Ingredients

1 cup lotus root in brine, cut into thin matchstick
1/2 carrot, shredded
1/4 red onion, thinly sliced
1 pickled jalapenos, chopped (fresh chili can also be used or leave out completely if you don’t like spicy)
2 cloves garlic, chopped
15 cooked shrimp, halves
vinaigrette (made with fish sauce, lime juice & sugar)
5-6 mint leaves, chopped (reserve some for garnish)
1 tablespoon crush roasted peanuts

Method:
In a large bowl, combine first 6 ingredients and pour vinaigrette, mix well. Add mint leaves and arrange on a plate to serve. Sprinkle with crush peanuts and garnish with reserved mint leaves.
